Sometimes dealers add additional decks when they win. The dealer may count the winning card as part of the first deck, and then another card is added onto the second deck. Most dealers are used to dealing with this kind of hand and will recognize it when he sees it.
This is a good moment to mention the “all or nothing” card strategy. In this case the dealer must either go all in or go broke. Some “experts” say that if the last card picked is a “king” that the dealer must raise the bet. If this happens, the dealer will have to raise the bet and take out another card. This “all or nothing” strategy is not always foolproof, because the dealer may decide to hold on to the last card dealt instead of throwing more into the pot.
The problem is that the “all or nothing” strategy makes the multi-deck game tougher to win. When a player goes all in on a multi-deck they usually get very few cards dealt to them. Therefore, it is impossible to call the flop and look for an immediate follow up bet. They might be able to raise the bet later on in the game but then it would depend on the strength of the hand. A lot of experience players can determine which bets will be profitable based on the cards that are already in the pot. Also, it helps if the dealer raises the bet the second time around when he has to deal with a new five or seven card hand.
The best way to determine how many cards the dealer has in blackjack is to use a multi-deck roulette wheel. Many Roulette wheels are equipped with a handy amount of chips that is referred to as the house edge. This number is usually between one and two percent of the maximum bet that can be made on the table. Keep in mind that the smaller the deck the less likely it is that there will be a multi-deck bet.

If you are going to go with a dealer with a poor winnings percentage chances are that you are not going to be very satisfied with your bet after the fact.
